Iced coffee is kind of in vogue right now. Simply by searching #icedcoffee in instagram you’ll get more than … pictures pop up on your screen. But want a sneaky way to bring this morning saviour into the night?
Now I don’t know about you, but I think Baileys & coffee go together like a match made in heaven, so after seeing a rather vague picture simply listing ingredients, no qauntities, but a delicious looking result my 2nd cousin and I got to work at making our own!
So why have we not thought of this sooner?! I do not know, but lets get this into your life now, the sooner, the better.
You’ll need the below to make 4:
1 x ice tray, or ice bag
1 cup freshly brewed strong coffee
4 tsp vanilla paste (or extract, or vanilla sugar if you’re partial to the added sweetness)
4 shots vodka
8 shots Baileys or any other Irish cream you like
The method is super duper simple.
Brew the coffee and allow to cool – make sure its extra strong to pack a punch!
Once cool pour this into the ice cube tray, bag, whatever you are using to make your ice cubes & pop in the freezer for a minimum of 2 hours.
Once the coffee is perfectly frozen, get out 4 tumbler & pour 1 shot of vodka in each.
Stir in 1 tsp vanilla paste into each until dissolved.
Followed by 2 shots of Baileys.
Pop in 3 ice cubes per glass and enjoy as the coffee seeps in.
Perfect for those long warm summer nights!
